Soto Padang

Soto Padang adalah hidangan berkuah kaldu sapi dengan bahan irisan daging sapi yang sudah digoreng kering, bihun (mie dari tepung beras), ditambahperkedel kentang dan dihidangkan panas-panas. Selain di Kota Padang, Sumatera Barat, hidangan Soto Padang juga mudah ditemukan di berbagai restoran Padang di penjuru dunia.

Resep Masakan – Soto Padang

Bahan Soto Padang :

• 1/2 kg Daging has dalam
• 1/4 kg tulang iga/kaki sapi
• 3L air utk merebus

Bumbu halus :

• 3 siung bawang putih
• 6 buah bawang merah
• 2 cm jahe
• 1 sdt merica + 2 buah kemiri

Bumbu lainnya :

• 2 cm lengkuas, keprak
• 1 batang sereh ambil putihnya, keprak
• 2 lembar daun salam
• 2 lembar dauh jeruk
• 2 butir kapulaga

Pelengkap :

• Pergedel kentang, goreng sampai matang.
• 1 bungkus suun, rendam hingga layu
• Kerupuk sagu merah, goreng
• Daun bawang dan seledri, iris tipis (utk taburan)
• Bawang goreng
• Sambal lado merah

Cara Membuat Soto Padang :

1. Rebus daging dan tulang dalam air, dengan api kecil, masukan pekak 2 butir. Biarkan daging empuk, angkat.
2. Bumbui daging dng bawang putih halus dan garam. potong-potong dadu, goreng sampai garing. Sisihkan
3. Tumis bumbu halus dan bumbu-bumbu lainnya, sampai wangi. Masukan kedalam air kaldu. Tambahkangaram dan sedikit gula sesuai selera. aduk sampai kaldu mendidih.
4. Penyelesaian : siapkan mangkuk. Atur pelengkap mulai dari soun, daun bawang sledri, bawang goreng, daging goreng, dan perkedel yang dibelah dua. Siram dengan air kaldu panas. Taburi kerupuk merah. Sajikan panas dengan sambal lado merah.
